Liberty Tree Tavern Pot Roast Recipe

Part of every trip we personally make to Walt Disney World we make sure to stop on by at the Liberty Tree Tavern! It's our family's favorite dining spot in the Magic Kingdom. Liberty Tree Tavern is a lunch/dinner location that is family style all you can eat. The "Patriots Platter" is what is included and that includes Roasted Turkey Breast, Pot Roast, and Oven-roasted Pork with Mashed Potatoes, Seasonal Vegetables, Herb Stuffing, and House-made Macaroni and Cheese. One of our favorites out of that platter alone is the pot roast! We decided to give it a try last night and it was pretty close to the real deal! I asked our daughter does she feel like she's at Disney World now? She abruptly said "No" but added "buttttt this is delicious!"

Here's recipe we tried out:

-1/4 cup vegetable oil

-3 pounds boneless beef shoulder roast

-1/2 cup (1 stick) butter

-2 cups large diced carrots

-2 cups large diced celery

-2 cups large diced onion

-1/4 cup chopped garlic

-2 tbls chopped fresh thyme

-1 cup all purpose flour

-1 cup burgundy wine

-6 cups beef broth (48 oz container)

Step 1: Preheat oven to 350 degrees Fahrenheit

Step 2: Prep the veggies (See Picture - Right)

Step 3: Heat 1/4 cup oil in pan, Brown Meat

Step 4: Remove the meat once browned on all sides and set aside.

Step 5: Add the stick of butter to the pan

Step 6: After the stick of butter has melted, add carrots, celery, onion, garlic and fresh thyme. Sauteé until vegetables are tender.

Step 7: Stir in the one cup of flour and continue cooking until flour is lightly browned.

Step 8: Stir in the wine (We used a Merlot wine)

Step 9: Stir in the beef broth

Step 10: Add the meat back into the pan

Step 11: Cover and bake for 40 minutes to an hour per pound, or until roast is fork tender.

We served this with standard mashed potatoes and mac & cheese from a box. It did the job and we just almost felt like we were in the Magic Kingdom enjoying some of our favorites for dinner there!
